• Crouton mixture
    6 oz croutons

    1/2 tsp black pepper

    1/2 tsp cayenne pepper

    1 tsp chili powder

    1 tsp thyme

    1/2 c. catsup

    1 tbsp ground cumin

    dash worcestershire sauce

    dash hot pepper sauce

    1 tbsp honey

    Vegetable mixture
    1/2 onion, roughly chopped

    1 carrot, peeled and broken

    3 whole cloves of garlic

    1/2 red bell pepper

    1 1/2 tsp kosher salt

    1 egg

    36 oz ground beef

    1. Preheat oven to 325 degrees.
    2. Combine all crouton mixture ingredients in a food processor until the texture is smooth and fine.
    3. Combine carrot, onion, garlic and red pepper in food processor, finely chop.
    4. Combine vegetable mixture, crouton mixture, egg, salt and meat.  Avoid squeezing the meat.
    5. Put into a 10 inch loaf pan and mold the shape.  Flip out onto a parchment paper lined tray.
    6. Cook at 325 degrees for 10 minutes, then brush with glaze.
    7. Return to oven at 325 degrees.  Done when temperature probe reads 155 degrees.
