• 3 c. rice

    1/2 c. + 2 tbsp diced onion

    3 c. coconut milk

    3 c. water

    3-6 slices fresh ginger root

    1 tbsp curry powder

    3/4 tsp salt

    1. Soak rice for atleast 30 minutes.  Rinse.

    2. Combine all ingredients, boil, reduce heat and simmer for 20-30 minutes.
