• Ingredients: Serves about 8

    6 Potatoes Peeled

    2 Zucchinis

    4 Carrots Peeled

    1 Onion (white)

    3-4 Eggs

    ½ Cup all-purpose flour

    ⅓ Cup of oil (Canola or Vegetable)

    ¼ Teaspoon Black Pepper

    ¼ Teaspoon salt

    1 Tablespoon of Baking Powder

    Preparation

    1. Preheat oven to 400°F.
    2. Use cooking spray or butter to lightly coat the bottom and sides of a baking dish, which should be at least 2-inch deep and 9 X 12-inches wide. We prepare both steps one and two prior to peeling and working with our products to reduce browning of our vegetables.
    3. Peel the carrots, potatoes, zucchinis, and onions. Then shred them either manually or with a food processor into a large bowl.
    4. Add the rest of your ingredients and mix with a large spoon to an even consistency.

    Pour the contents into the baking dish and bake for approximately 45-60 minutes, depending on your oven, until it is golden brown. For a firmer consistency, allow the Kugel to cool for 20 minutes before eating.
